One Year Anniversary

This weekend we celebrated our one year anniversary mostly by eating lots of delicious food! We start out Friday night going the temple then we went to a Mexican place called Por Que No? and it was surprisingly great. They mostly do tacos so we tried the carnitas, carne asada, and fish tacos. Bryce liked the carnitas one best and I liked the fish one. We also got chips and salsa along with lime Jarritos to make it extra special. We then went to Voodoo's for doughnuts before calling it a night.
Saturday we went to breakfast at The Waffle Window. It really is just a window in a building that you order your food. We got the Rose City Waffle (fresh Oregon Hood strawberries, rose cream and rhubarb sauce with whipped cream) and the Blueberry Cheesecake Waffle (blueberry cinnamon compote on top of our delicious cream cheese pudding, with whipped cream and sprinkled with baked graham cracker crust topping) INCREDIBLE!

After breakfast we stopped at the library and then came home for a little rest and relaxation, which included pool time! I even got some sun but mostly on the right side.

For dinner we went to St. Jack, a French restaurant that we went to the night we got engaged. It was just as good as the first time! We started with bread and butter with a cheese plate. We got three kinds of cheeses - cow, goat, and sheep. All so good and all so different! Then we had a roasted beet salad and cheese scallops. I could have died happy after the appetizers. I have never eaten so slowly trying to make the wonderful flavors stay in my mouth! Then we ended up waiting about 40 minutes for our main course, which was nice to allow us some time to make room for more food. Bryce got a steak and pommes frites that were cooked to perfection. I got a roasted chicken with polenta and mushrooms that was so tasty. After we finished dinner, it was already 10:30 and Bryce and I could have fallen asleep right there, but we needed dessert! Bryce got the rhubarb mousse with vanilla custard and I got lemon madeleines, which were addictively good.

Sunday, our actually anniversary, we went to church and then after made a delicious meal. We made kebabs - beef, pineapple, peppers, onions, and mushroom. Bryce marinated the beef and then grilled them to perfection!
I made a zucchini and tomato spinach salad along with fried polenta. We ate until we were full especially of beef and pineapple.
Then we went on a lovely walk at a nearby park since it was such a perfect day.
After we had dessert. I made a fresh Peaches 'n' Cream pie. Oh was it good!
Then one of my favorite parts of our anniversary was celebrating with "traditional" anniversary gifts. The first anniversary gift is PAPER, which might sound lame, but I had so much fun coming up with creative ideas that used paper! I made a calendar for this coming year using pictures from our first year of marriage. Then I had a wedding photo turned into a puzzle! I then wrapped everything in wrapping paper that we saved from wedding presents. And of course, I made a card.
Putting together our puzzle
I really was happy with how the card turned out.

Happy One Year to Us!
