With all the berries we picked on the weekend, we made Strawberry and Raspberry freezer jam. I used the Certo Sure-Jell Liquid Pectin and liked that the recipe didn't require me to add any corn syrup to prevent crystallization. The complete process from going to the store to get the supplies to having the jam in containers was only about 2 hours!
Yummy Jam - now need some homemade rolls!
A few other things I learned from this berry experience are don't pre-wash the berries until you are ready to use them. After picking them on Saturday, we just put them in the refrigerator and they held up way better. The other thing I learned is strawberries require more mashing than raspberries. I wanted fruit chunks, but I had almost whole berries. And finally, the recipe is freaks out about measuring exactly and that is one thing I never do and despite the warnings of failure if measurements are off, I came out on top with my few extra berries and a little less sugar! I win.
